French Toast

1 egg
1 1/2 tsp vanilla
2 tsp cinnamon sugar
2 tsp milk
2 pieces of bread
syrup

-Mix egg, vanilla, sugar, and milk together
-Soak bread on both sides
-Cook in pan
-Serve with syrup

Healthy Chocolate Peanut Butter Smoothie

1 pkg hot chocolate mix
1 C skim milk
1 banana
1 tbsp peanut butter

-Throw all together in the blender
-Keep in fridge for about half an hour (or until cold enough)
-Enjoy

Broccoli Bake, Buffalo Cheese Chicken & Italian Mashed Potatoes

Broccoli Bake
40oz bag frozen broccoli
14-16oz velveeta cheese (cut small)
1 stack ritz
1 stick butter

-Layer in a dish, broccoli, cheese, broccoli, cheese, crushed ritz
-Pour one stick of melted butter over the ritz
-Cover and bake at 350 until cheese melts

Buffalo Cheese Chicken
*this was originally a dip, but instead of shredding the chicken and adding it into the sauce to eat with chips, i poured the sauce over whole chicken. So it can be done either way
6 chicken breasts
1 (8oz) pkg cream cheese
1/2 C ranch
1/2 C buffalo sauce (or more for desired spiciness)
3/4 C cheddar cheese  

-Mix all into a pan
-Keep stirring as the cheese melt
-Cook chicken on the side
-Add cooked chicken to pan to cover with sauce and serve 
*For a dip, melt all ingredients, and belend in shredded chicken, pour into baking dish and bake in the oven. Option to top with blue cheese crumbs, and serve once melted 

Italian Mashed Potatoes
6 large white potatoes 
16 oz moz cheese
3/4 C half and half
3/4 C italian bread crumbs
1/4 C parm cheese

-Peel potatoes and cut into chunks
-Boil water & add potatoes
-Let cook until tender with a fork
-Drain potatoes and mash
-Add in half and half and stir
-Add in almost all moz cheese and stir
-Layer into dish, top with rest of moz cheese
-Top with bread crumbs
-Top with parm cheese
-Bake in oven uncovered about 15-20 minuets or until cheese melted 


Lemon Garlic Pasta

no real measurements, all done by taste

olive oil
bread crumbs
parsley
lemon juice
garlic powder
salt & peper
Pasta

-toss all together in a pan
-serve warm

Cheese Strata

12 slices of white bread, cut holes with water glass
16 slices of american cheese
2 C diced ham
6 eggs
3 1/2 C milk
1 T instant onion flakes

-Put the circles of bread aside, tear the remaining bread pieces and put on bottom of greased pan
-Sprinkle onion flakes over the bread
-Layer the diced ham, then the slices of cheese
-Put the circles of bread on top
-Combine eggs and milk and pour on top of casserole 
-Cover and put in fridge over night
-The next morning cook it uncovered at 325 degrees for 55 minutes. Let it stand 10 minutes before serving

1 C chocolate cake mix
~2 C confectioners sugar
1/2 stick butter
1/4 C milk
1/2-3/4 C peanut butter 

-Mix top four ingredients, do not stir
-Microwave for 2 minutes, stir
-Add more confectioners sugar until thick
-Add in peanut butter
-Pour into greased pan and let cool/set in fridge


Red Velvet Fudge


1 C red velvet cake mix
~2 C confectioners sugar
1/2 stick butter
1/4 C milk
1/2 can cream cheese frosting

-Mix top four ingredients, do not stir
-Microwave for 2 minutes, stir
-Add more confectioners sugar until thick
-Add in cream cheese frosting 
-Pour into greased pan and let cool/set in fridge


Cake Batter Fudge

1 C funfetti cake mix
~2 C confectioners sugar
1/2 stick butter
1/4 C milk
1/2 C sprinkles (rainbow)

-Mix top four ingredients, do not stir
-Microwave for 2 minutes, stir
-Add more confectioners sugar until thick
-Add in sprinkles
-Pour into greased pan and let cool/set in fridge

Chicken Caesar Sandwiches

2 lbs chicken
1 C caesar
1/2 C shredded parm cheese
2 C romaine lettuce, shredded
hamburger buns

-Place chicken in slow cooker with water. Cook on low for 4-6 hours
-Remove chicken, drain water
-Shred chicken, and place back into cooker
-Pour dressing and parm over chicken and stir
-Cook on high for 30 minutes
-Spoon onto roll, & top with lettuce

Broccoli Cheese Soup

1/2 C chopped green peppers
1/2 C chopped onions
2 tbsp butter
1 (10oz) can cream of chicken soup
2 C milk
1 lb cubed velveeta
1 (10oz) pkg frozen broccoli

-Combine all ingredients in crock pot
-Cook on high 3-4 hours
-Mash with a potato masher

Penne alla Vodka

1 onion
3 tsp olive oil
6 garlic cloves
1 C vodka
2 (28oz) cans tom puree
1/2 C water
salt
pepper
1 C heavy cream
parsley

-Dice onion and garlic and cook in oil in frying pan until soft
-Add vodka and let alcohol burn off
-Add 2 cans of tom sauce and rinse cans with water and add to pan
-Let cook on stove top on low for about 1 hour
-Stir in salt, pepper, and cream
-Combine with pasta 
*Makes enough sauce for about 2-3 pounds of pasta 


Butternut Squash Soup

1 medium onion
2 tbsp butter
3 garlic cloves
1 lrg butternut squash
2 red potatoes
5 C chicken broth
1/2 tsp salt
1/4 tsp pepper
2 tsp thyme

-Cut potato into cubes
-Take off skin and de-seed squash and cut into cubes
-Mince garlic and onion
-Combine all ingredients above in slow cooker
-Cook on high for 7.5 hours
-After take potato masher and mash soup right in slow cooker 

Orange BBQ Chicken

1 C bbq sauce
1 C orange marmalade (or peach)
Chicken

-Combine sauce in bowl
-Let chicken sit in sauce for about an hour or so
-Cook chicken in oven at 350 for about 30 min
